Random Food for Thought:

I’m pretty sure homemade pesto and sun dried tomatoes can fix or revamp any meal! Sorry for the terrible picture, this was literally a random fleeting thought that I wanted to share!


Was recently going through an aversion to eggs (no I’m not pregnant) and wanted to give it the good old college try again. So I slathered some pesto on a toasted English muffin and threw in some sun-dried tomatoes to my scrambled eggs! Haven’t dry heaved or gagged yet!

How to:
1 English muffin, toasted to your liking
1 slice prosciutto, torn into pieces
1 tsp pesto
1 egg, or egg white if you’re lame
1 tbs total sun dried tomato, chopped
1-2 mushrooms, chopped or sliced
1 tsp green onion tops, chopped
Fontina cheese for topping

Toast muffin(s), slather on pesto, pile on prosciutto.
In a non-stick skillet, heat EVOO on medium heat, toss in green onions, mushrooms, and tomatoes. Cook till soft. Lightly beat egg then pour over veggies, turning pan to make omelette. Once cooked, fold into quarters, place on top of muffin, add cheese, eat, and then comment here to tell me how dang good it was!
